Chipotle Wild Boar Bacon Slab Tacos with Pineapple Salsa

Chipotle Wild Boar Bacon Slab

  • 1 Gamekeeper Butchery Wild Boar Bacon Slab; Diced into 1/2 inch Cubes
  • 1 7 oz Can of Chipotle Peppers in Adobo Sauce
  • 1 Tbsp. Garlic Powder
  • 1 Tbsp. Onion Powder
  • 1/2 Tbsp. Cumin
  • 1/2 Tbsp. Paprika
  • 4 Tbsp. Brown Sugar
  • 12 Flour Tortillas

Pineapple Salsa

  • 1/2 Ripe Pineapple; Finely Diced
  • 1 Jalapeno Pepper; Deseeded and Finely Diced
  • 1 Serrano Pepper; Deseeded and Finely Diced
  • 1/2 Bunch of Cilantro; Finely Chopped
  • 1/2 Red Onion; Finely Diced
  • 2 Medium Avocados; Finely Diced
  • Juice of 2 Limes
  • 1/2 Tsp. Cumin
  • 1/2 Tsp. Ginger Powder
  • Salt to Taste


Chipotle Wild Boar Bacon Slab

  1. Begin by setting your oven to 325 Degrees Fahrenheit.
  2. Next, dice your wild boar bacon slab into 1/2 in cubes and set them into a deep set baking dish or lasagna pan as seen below.
  3. Take a bowl and add your seasonings and chipotle peppers with all the liquid from the chipotle pepper can. Mix them together and use a spoon to mash the chipotle peppers as finely as possible.
  4. Take the mixture and pour it over the wild boar bacon cubes and thoroughly mix them around until all the cubes are properly coated.
  5. Finally, place the baking dish into the oven and let them cook for 45 minutes.

Pineapple Salsa

  1. Finely dice all your vegetables and pineapple and thoroughly mix them in a bowl with your Cumin and Ginger powder. (This salsa is medium-high in heat, but if you want to tone it down in heat feel free to substitute the serrano pepper for another jalapeno. Vise versa, substitute the jalapeno for another serrano if you want to make it very hot in taste.)

Taco Construction

  1. This one is pretty self explanatory, but once you have taken your Wild Boar Bacon Cubes out of the oven place them onto a flour tortilla and top it with your pineapple salsa and enjoy!
