Ingredients:
Wild Boar Chorizo Stuffed Alligator:
- 1 Gamekeeper Butchery Whole Alligator
- 1 cup BBQ dry rub
- 1tbls Chinese 5 spice
- 2 x 1lb Packs of Gamekeeper Butchery Wild Boar Chorizo
- 2 Bottles of Kosmo Q Sticky Asian Rib Glaze
- 80 flour Street Tacos
Peanut/Teriyaki Slaw
- 8- 16oz bags of shredded cabbage
- ½ cup Honey
- ½ cup Rice Vinegar
- ½ cup Vegetable Oil
- ½ cup Peanut Butter
- 1tbls Teriyaki Sauce
- 1tbls Sesame Oil
- 1tbls prepared Ginger
- 1 cup chopped cilantro

Directions:
- Split Alligator tail and trim out the fat on the top and bottom. Then stuff the top tail with Chorizo and place bbq rub and 5 spice all over
- Place Alligator on the smoker and cook at 275 degrees until the tail reaches 165 degrees internal temp
- Glaze the Alligator with Asian Rib glaze at the end
- Mix together ingredients for the slaw
- Remove chorizo and alligator meat and chop together fine
- Build tacos. Place meat and slaw inside of the street taco and top with chopped cilantro
