Alligator & Wild Boar Chorizo Street Tacos

Ingredients:

Wild Boar Chorizo Stuffed Alligator:

Peanut/Teriyaki Slaw

  • 8- 16oz bags of shredded cabbage
  • ½ cup Honey
  • ½ cup Rice Vinegar
  • ½ cup Vegetable Oil
  • ½ cup Peanut Butter
  • 1tbls Teriyaki Sauce
  • 1tbls Sesame Oil
  • 1tbls prepared Ginger
  • 1 cup chopped cilantro

Directions:

  1. Split Alligator tail and trim out the fat on the top and bottom. Then stuff the top tail with Chorizo and place bbq rub and 5 spice all over
  2. Place Alligator on the smoker and cook at 275 degrees until the tail reaches 165 degrees internal temp
  3. Glaze the Alligator with Asian Rib glaze at the end
  4. Mix together ingredients for the slaw
  5. Remove chorizo and alligator meat and chop together fine
  6. Build tacos. Place meat and slaw inside of the street taco and top with chopped cilantro
  7. Enjoy!
